Astringency is a major sensory property and plays an important role in the overall quality of juice wines. A contributor to astringency condensed tannins, which can precipitate with salivary glycoproteins. And thus, it vital develop methods measure tannin accurately. Recently, interest application assays has been increasing various fields. Condensed broadly include determination concentration, activity, mean degree polymerization its derivative flavan-3-ol sulfonates content. In this guideline, mechanisms practice most common applied research labs are discussed detail.
